Mmmmmm

  • Whole wheat crust (I’m trying the Whole Foods frozen ones – just have to thaw it out)
  • Spinach
  • 1 tomato, sliced thin
  • 1/2 zucchini, sliced thin
  • 1/4 onion, chopped
  • ~ 4 oz. Mozzarella cheese
  • 1/2 green pepper, chopped
  • Pepperoni, sliced thin
  • Tomato sauce

Clearly there is a lot of chopping and slicing to be done, so that works well with the thaw time on the crust.

If you make your own crust, you’ll have to start with enough time to let the dough rise. When the crust is ready, slightly pre- cook it for about 5 minutes, but only if it’s from scratch. I do this because I always have lots of ingredients that might make it soggy otherwise.

Start preheating the oven. Usually you want to be at about 400° for pizza.

Spread a thin layer of tomato sauce on the crust. Add spinach as desired.

Then add your onion, green pepper, zucchini, and tomato.

If the pepperoni is near the top, it has a chance of getting just a little crisp on the edges.

Add the cheese, and if desired, some Italian spices.

If you want to go vegetarian, just leave off the pepperoni.

Bake the pizza until everything looks melty and delicious.
